Jaen is a city and region located high in the jungle of far northern Peru. El Diamante is a sub-region of Jaen, but uniquely located close to the city, making it ideal for the coffee trade. El Diamante also has an ideal climate for growing from 1700 to 1900 m above sea level, has many sources of fresh water and protected forests that maintain a thriving natural environment.

It is here that Elmer grows various types of coffee, from acquaintances to experimental ones, and is helped by his son Elvis, who also owns his own farms. It is a family business where ripe cherries are collected and brought to the family processing station. Here they have a wet mill, a depulper and washing tanks,to produce washed and dried coffee.

Caturra is a dwarf natural hybrid of the bourbon variety. The first mentions and found plants are sometime in the mid-1950s from Brazil. Farmers quickly fell in love with it because of its small stature, as they were able to plant a larger number of plants in a smaller area and thus increase the profitability of farms.
Caturra has great taste properties, unfortunately it is very susceptible to disease.

Castillo is an artificially created variety that is popular especially in Colombia. Almost two decades ago, it replaced most of the varieties that were affected by a disease called coffee rust. Today, it is popular mainly for its disease resistance and high yields. Some roasters argue that its taste properties, especially the typical dry finish, are not very good and are therefore often the subject of debate.
