PRODUCENT
Farma Piedra Azul se nachází v La Libertad, Huehuetenango, Guatemala, v nadmořské výšce 1500 až 1800 metrů nad mořem. Farmu spravuje rodina Vides. Byla založena v roce 1956 Robertem Molinou, který zde začal pěstovat odrůdy Caturra, Bourbon a Catuaí. Od roku 2016 farmu vedou synovci Roberta Moliny, kteří zpracovávají kávu promytou, suchou i metodou “honey”.
Farma se rozkládá na 25,5 hektarech a zaměstnává 8 stálých pracovníků a až 45 sezónních pracovníků. Mezi hlavní výzvy patří klimatické změny, kolísání srážek, rostoucí ceny hnojiv a nedostatek pracovní síly. Jeden z velkých cílů bratrů je oddělit kávovníky podle odrůd tak aby mohl zvýšit hodnotu své kávy a zachovat a případně vylepšit její kvalitu. Farma se také zaměřuje na zvýšení biodiverzity výsadbou různých stromů.
Piedra Azul podporuje čtyři komunitní školy, poskytuje stipendia na specializaci v oblasti kávy a realizuje několik projektů výsadby stromů jako součást své sociální a environmentální odpovědnosti.
ZPRACOVÁNÍ
Roční produkce farmy činí přibližně 36 000 kilogramů zelené kávy. Sklizeň probíhá od prosince do března. Kávové třešně jsou ručně sbírány na základě zralosti a úrovně Brix. Po 24hodinové před-fermentaci ve sběrných pytlích je káva zvážena, tříděna, zbavena dužiny a fermentována po dobu 15 až 24 hodin v závislosti na klimatických podmínkách.
Sušení trvá 15 až 18 dní, přičemž káva je pravidelně otáčená pro zajištění rovnoměrného sušení. Po zpracování je káva skladována v nylonových pytlích. Každý krok od pěstování po export je pečlivě zaznamenáván v softwarovém systému pro zajištění sledovatelnosti.
Vodní hospodářství na farmě je prováděno s ohledem na efektivitu a udržitelnost. Voda používaná při zpracování kávy je opakovaně využívána a čištěna přes filtry a přírodní bariéry, než je znovu použita na polích. Veškeré čištění vody odpovídá národním standardům.
ODRŮDA
Na farmě se pěstují odrůdy Caturra a Bourbon. Pěstování kávy je pečlivě řízeno, přičemž doba sklizně se liší podle nadmořské výšky. Boj proti škůdcům probíhá celoročně a farma se při prořezávání řídí programem ANACAFE. Hnojení se provádí od března do října ve třech aplikacích na základě výsledků půdních testů. Průměrný obsah organické hmoty v půdě je 4 %.
Farma vypracovala index kvetení, který pomáhá předvídat náchylnost rostlin na základě povětrnostních podmínek. Tento index slouží jako vodítko pro aktivity na farmě a pomáhá řešit dopady klimatických změn, zejména v oblasti teploty a distribuce srážek.
Piedra Azul čelí finančním výzvám v důsledku rostoucích nákladů na produkci, nedostatku pracovních sil a inflace. Pro udržení konkurenceschopnosti se farma zaměřuje na produkci vysoké kvality ve středních a vysokých nadmořských výškách, zatímco v nižších polohách zvyšuje produktivitu pomocí odolnějších kávových odrůd.
