The limited edition Geisha from the La Victoria farm, owned by Aristobulo Rayo Mendez, comes from the Ortega region in Tolima. This exceptional coffee is grown on a 47-hectare farm, where 8 hectares of coffee plantations are surrounded by 10 hectares of protected natural forest. It will captivate you from the very first sip.
PRODUCER
Aristobulo Rayo Mendez is a member of Café Agrario, an association of 35 coffee producers from Ortega. The association focuses on specialty coffee production and, in recent years, has been adding value to its coffee not only through exports but also by roasting and selling it locally. Historically, Café Agrario has faced challenges due to the civil war and issues with buyers who never paid for the coffee they received.
PROCESSING
Coffee cherries are hand-picked every 20 days, with pickers receiving a premium for a careful selection of ripe cherries. After harvesting, the coffee is pulped and fermented for 24 hours in a tiled tank. It is then washed three times and dried on African beds.
VARIETY
Geisha is one of the most prestigious coffee varieties, originally from Ethiopia. It has become legendary among coffee varieties for its delicate flavor. This coffee is known for its pronounced sweetness, bright acidity, and complex flavor profile.

Carbonic maceration is just one of the ten processing methods carried out by the producer Hendra of Pegasing station. The beans were grown at high altitudes by the best farmers in the area, fermented for 70-80 hours without air and with the help of carbon dioxide, and then dried on raised beds for 20 days.
