Geisha from Finca La Montaña in Honduras. Elder Ignacio Chávez Martínez fell in love with coffee farming as a child when his grandfather introduced him to coffee trees. When he inherited land in 2009, he decided to continue the family tradition. We roasted it with love to bring out its elegance – it tastes like daim, bergamot, and lemon balm tea.
PRODUCER
Finca La Montaña is located at 1,760 MASL in the San José de los Andes region of Honduras. Elder Ignacio Chávez Martínez has been involved in coffee farming since childhood, learning from his grandfather. After inheriting land in 2009, he initially grew conventional coffee but shifted to specialty production in 2015, focusing on quality and sustainability.
The 4.5-hectare farm primarily cultivates Geisha, complemented by Pacas, Bourbon, Parainema, and SL28. It produces approximately 15 tons of coffee annually and employs eight workers during the off-season. Elder applies organic fertilizers and carefully maintains soil health, including regular pruning to preserve the vitality of his coffee trees.
PROCESSING
The cherries are carefully handpicked and depulped, then fermented for over 20 hours before thorough washing and drying for 12 days in a solar dryer. After drying, the beans are stored in protective bags on-site before being transported to Exportadora San Vicente.
Elder prioritizes environmental responsibility—he manages wastewater through a dedicated well and implements integrated pest management strategies. Despite heavy rainfall occasionally disrupting the harvest and drying process, he remains committed to practices that minimize climate impact.
VARIETY
Geisha is considered one of the most exceptional and prestigious Arabica varieties. Originally from Ethiopia, it spread through Panama and gained worldwide recognition for its distinctive aroma and complex flavor profile. At Finca La Montaña, Geisha is cultivated with the utmost care to highlight its best qualities.
