Hendra is our long-time partner from Indonesia and one of the most inspiring innovators we’ve met. His experimental approach pushes the boundaries of both flavor and coffee processing. This anaerobic lot from Pegasing combines intense sweetness, cherry pie notes, and the fresh touch of lime in a truly unique cup.
Story of the farm and station
The Team Pegasing station in Indonesia’s Pegasing region is a family project led by Hendra and his father Hamdan, who focus on experimental coffee processing. Hamdan bought the farm in 2006, and together they turned it into a small center of innovation – from a wet mill and gravity washing channels to polyethylene drying tunnels.
By combining traditional practices with continuous experimentation, Pegasing has become one of the most exciting coffee producers in the region. Today, Hendra collaborates with over 70 local farmers and processes up to 40 tons of coffee annually.
Processing
This Pegasing coffee undergoes anaerobic and natural processing, one of ten different methods Hendra uses. Ripe cherries ferment for 48 hours in sealed plastic bags without oxygen before being dried for 20 to 25 days on raised beds under cover, with temperature carefully monitored and the coffee turned regularly for even drying. Afterward, all unripe or defective beans are removed by hand to ensure specialty-grade quality.
Variety
Tim Tim is the Indonesian name for the Hybrido de Timor variety – a natural hybrid of Arabica and Robusta discovered on the island of Timor in 1917. Known for its disease resistance, it has spread worldwide and serves as the genetic foundation for many modern hybrids.
Gayo 1, officially released by the Indonesian Ministry of Agriculture in 2010, is another resistant variety known for its high quality. Its genetics likely trace back to Hybrido de Timor as well, complementing Tim Tim to create a balanced and complex cup with fruity and tea-like notes.

Why Uganda Matters
Namugowa isn’t just another specialty coffee. It’s part of a bigger story that we’ve poured a piece of ourselves into. A year ago, we had the chance to be right there in Uganda – to meet the farmers who grow the coffee, to see the process from harvest to drying. And that’s when we realized we wanted to do even more.
Together with The Coffee Gardens, we co-financed the opening of a QC Lab in Uganda. This quality control laboratory enables farmers to evaluate their harvest directly on site, refine their practices, and, as a result, achieve fairer prices.
Every cup of Namugowa is not only about flavor, but also about the future. About giving farmers the tools and knowledge that open doors to better conditions and stability. And that’s exactly why we love returning to Uganda.🤎
