We fell in love with Robinson’s coffee. Besides being clean, fruity, and an incredibly approachable filter coffee, it carries a sense of long-standing patience, the sun of the Colombian Cauca region, and the warm feeling that together, we are helping to build stability and peace in a small community. STORY OF COLOMBIAN SPECIALTY COFFEE
The ACC association was founded in 2016 as a beacon of hope for the Piendamó region. It brings together 77 families who believe that the path to peace in their territory lies in collective work and top-quality beans. Robinson Rivera has been an integral part of this community for five years. At El Silencio, he farms with deep respect for the surrounding forest, and through the association’s support, he can continually push his coffee further without losing touch with the tradition passed down by his ancestors 18 years ago.
THE HONEY PROCESSING METHOD
The honey method requires intuition and time. It all begins with harvesting the ripest cherries with the highest sugar content. After twelve hours of oxidation in tanks, the coffee is pulped, leaving the sweet layer of mucilage on the bean. The coffee rests in this state for another 36 hours, gaining its characteristic sweetness. Slow drying in parabolic dryers for six days ensures that the freshly roasted coffee retains its freshness and bright character.
VARIETY AND TASTE PROFILE
Robinson grows the Castillo variety, which becomes surprisingly delicate in his hands using the honey process. In the cup, this variety transforms into a pure taste experience, where the sweetness of peach jam meets the freshness of lime and the lightness of black tea. This 100% Arabica stands out for its balanced flavor and clarity in every sip.

This coffee is deeply personal to us. In May 2025, we sat with Andre Tuang at his processing station in Ruteng, listening to the story of how he returned to his native Flores to work with local farmers. He took us through the station and the farms in the surrounding hills, letting us experience every step of the process from harvesting cherries and hand-sorting to washing the coffee.
This journey gave us a profound understanding of Andre’s philosophy and how the local terroir is reflected in the final cup. We are thrilled to bring you a coffee where we’ve witnessed every step of its journey, all the way to our roastery.

We met Kevin and Kenny in person. In May 2025, we spent a few days with them right there in Java. They introduced us to their families, friends, and the people from the farms. We shared the start of the season with a communal prayer and meal, and we even climbed the volcano together. For us, this coffee is a return to a place where we truly felt like part of the family.
