The Story
Presbitero Herrera Torres grows coffee in the village of San Antonio, in the Huabal district of Peru. On his plot, La Fila, he has two hectares of coffee and 9,500 coffee trees at an altitude of 1,530 m a.s.l. He organises the harvest with his family and hires seasonal pickers from a nearby village.
He fertilises the farm with compost mixed with manure. He does not use chemical fertilisers, pesticides or fungicides.
Presbitero has supplied coffee to Falcon Coffees, our green coffee supplier, since 2022. In 2024, he joined the Falcon Specialty Plus programme. Through the programme, he received a soil analysis and a fertilisation plan, which he follows, as well as equipment for measuring and processing coffee. The partnership also includes training and visits from agronomists directly to farms.
How the coffee is processed
This coffee is processed using the natural method and dried in a solar dryer. The dried coffee is stored in hermetically sealed bags placed inside polypropylene sacks and kept on pallets.
Variety
This coffee is a combination of the Catuai and Pache varieties.
Catuai originated in Brazil as a cross between Mundo Novo and Caturra. It inherited its shorter stature from Caturra, making the coffee trees easier to harvest. There are both red- and yellow-fruited variants.
Pache is a natural mutation of the Typica variety, discovered in Guatemala in 1949. Its coffee trees are shorter, allowing growers to plant them closer together.
