We roast this coffee for filter. It works well with all types of filter brewing methods (V60, Solo Dripper, Aeropress, Chemex, French press, Clever Dripper...).
The Story
eñas Blancas is not a classic farm in the narrow sense, but a coffee processing center in Acevedo, in Colombia’s Huila region. It was created as a shared space where smaller producers can access modern coffee processing infrastructure and achieve the more stable quality expected by the specialty coffee market.
Behind the center are Nestor Lasso and Jhoan Vergara. Nestor Lasso is a young producer from Huila who focuses on experimental processing, fermentation and more precise quality control. His work with modern methods has helped Peñas Blancas build a reputation as a place focused on clarity, consistency and high-quality micro-lots.
Jhoan Vergara brings experience in farm management and post-harvest processes, meaning everything that happens to coffee after harvest. His work focuses on supporting local farmers, fairer trade relationships, producer education and sharing knowledge around processing and quality control.
Peñas Blancas also works as a social initiative. It helps farmers who might otherwise have limited access to modern infrastructure, technical guidance or stable routes to market. By bringing processing together under expert supervision, each lot can reach higher quality, which helps producers secure better prices and more stable long-term income.
The center also includes training, practical workshops and knowledge-sharing between producers, agronomists and people from the coffee industry. In a region where coffee is the main source of income for many families, direct trade relationships and transparent payments have a real impact on farmers’ stability and their ability to reinvest in their farms.
How is the coffee processed?
This Gesha was processed using the natural method. With this method, the coffee cherries are not depulped immediately after harvest; they are dried whole, with the fruit still surrounding the bean. During drying, this fruit layer influences the final flavour profile and supports the coffee’s more expressive fruity character.
The process requires careful control so the coffee dries evenly and the flavour stays clean. Peñas Blancas works with drying innovations, including solar drying, while also focusing on reducing water consumption.
Variety
Gesha is an arabica variety known for its elegant and often floral expression. In this coffee, its character meets natural processing, which highlights fruitiness and a sweeter impression in the cup.
