The Story
Pedro Garcia Diaz owns four hectares of land in the village of San Francisco, in the San José del Alto area. His family looks after the farm. Pedro helps during the harvest, pruning and fertilisation.
Pedro is part of Falcon Coffees Peru’s Specialty Plus project. Thanks to the partnership with Falcon, his coffee makes its way to our roastery. Falcon buys directly from growers in the San José del Alto area and supports improvements in coffee quality on their farms. San José del Alto is approximately a four-hour drive from Jaén. It is a remote area with poor roads and few growers’ cooperatives and associations.
How the coffee is processed
The cherries are selectively picked. After resting for 24 hours, the skin and pulp are removed. The coffee then ferments for 36 hours before being dried for 10 to 15 days.
Variety
This coffee is of the Tabi variety. Tabi was developed in Colombia at the Cenicafé research centre by crossing the Typica and Bourbon varieties with the Timor hybrid.
It was bred for both coffee quality and resistance to coffee leaf rust, a disease that affects coffee trees. Pedro also grows Bourbon, Caturra and Pache on his farm.
